What is cauliflower mash?

Cauliflower mash is a favorite low carb swap for mashed potatoes. It's a keto diet staple for many potato lovers who are craving their beloved starchy root vegetable who need an alternative with fewer carbohydrates.

There are a variety of different ways to prepare the cauliflower for cauliflower mash. Mostly, you just need to cook the cauliflower until it is tender enough to blend. You can boil it, steam it, or microwave it, but I find those methods leaves the cauliflower a bit on the watery side once it's all mashed up.

I much prefer roasting the cauliflower for cauliflower mash! Any excess moisture is cooked right out of the cauliflower, giving the roasted cauliflower mash the perfect texture and making a much more believable potato replacement. It's not watery at all! You can blend it up in a food processor for a lump-free "mashed potato" or if you prefer a lumpy mashed potato, as do I, you can manually smash it up with a potato masher.

How to make dairy-free cauliflower mash creamy?

Many cauliflower mash recipes relyon dairy to get the creamy copycat texture of mashed potatoes. But I have to tell you a little secret, even when I was a total carbivore and made real mashed potatoes, I never used dairy. No heavy cream, milk, or sour cream. Instead, I used mayonnaise to create the perfect creamy mashed potatoes. Dead serious! The mayonnaise gives the potatoes this luxurious, velvety texture without any dairy whatsoever.

So naturally, when I make cauliflower mash, I use mayo too! If you are dairy free, and even if you aren't, I highly recommend you give the mayo trick a shot if you're aiming for a creamy texture!

Ghee and olive oil are also excellent dairy-free additions to cauliflower mash; however, they don't significantly contribute to the creaminess of the dish.

The Roasted Cauliflower Mash Recipe

Toss cauliflower florets and garlic clove in a little melted ghee, spread out on a baking pan, and season with sea salt. Bake at 425 degrees Fahrenheit for 35-40 minutes. Remove from the oven and either mash or puree the cauliflower and garlic. Drizzle with a little olive oil to help with blending and add in mayo to make the roasted cauliflower mash extra creamy! Season with salt and pepper and enjoy!

Instructions

  • Preheat oven to 425 degrees Fahrenheit.

  • Cut cauliflower into pieces, toss cauliflower and garlic cloves in melted ghee, then spread out into an even layer on a rimmed baking sheet. Season with sea salt and bake for 30 minutes.

  • Carefully transfer roasted cauliflower and garlic to a food processor or use a handheld immersion blender topuree ingredients. Blend in mayonnaise once the cauliflower has been pureed.

  • Season with salt and pepper to taste.
