Soft Gingerbread Cookie Bars

Last year I turned my all time favorite sugar cookies into sugar cookie bars and never looked back. Oh my goodness—what a time saving hack. All the flavor, very little mess, and NO rolling. I decided to do the same with one of my favorite Christmas cookies this holiday season—- gingerbread cookies! All you need to know is that they taste amazing, are full of ginger, cinnamon, molasses and nutmeg, and make your entire home smell divine as they bake.

If you’re baking up dozens of cookies this year, cookie bars are a great hack!

Unlike the gingerbread cookies that I make using this recipe, these do not need to chill before cooking. They also do not need to be rolled out or cut with cookie cutters!

Simply dump your dough onto a cookie sheet and sprinkle with flour. This keeps your hands from sticking to the super soft dough.

Pat into the pan, adding more flour if necessary, and bake cookie bars for 15 minutes. When you pull the pan out of the oven the dough may not seem quite set, but don’t worry, it will continue to cook and set up as it rests.

I use the same frosting for my soft gingerbread cookie bars that I use on my sugar cookie bars. It’s very basic; butter, vanilla, milk and powdered sugar. Beat together until smooth and pour over bars.

Spread the frosting over the bars and add your favorite holiday sprinkles. I LOVE cinnamon candies on my gingerbread cookies so I added a handful on my cookie bars, but nuts or mini chocolate chips would be yummy too.

Tip: when you cut the bars, use a sharp knife and clean the frosting off with a paper towel after each line of cutting. This makes for clean edges and beautiful sugar cookie bars when they come out of the pan.

Tip: Use an angled frosting spatula for perfect spreading!

Tip: I like using sheet pans instead of a casserole dish. These are my FAVORITE sheet pans to use when I bake cookies and cake.

FAQs

What makes gingerbread hard or soft? ›

Some gingerbread recipes require some time to soften after baking because they are initially firm. Gingerbread is made harder by molasses and honey, but it becomes softer when water is absorbed by the sugar.

Why do my gingerbread cookies fall apart? ›

From doubling up on molasses to using too much flour, there is a lot that can go wrong. Forgetting the molasses resulted in a crumbly cookie that was light in color. Combining all ingredients at once created lumps in the finished product.

Why are my ginger biscuits soft? ›

Mistake #2: Not resting your dough

After the gingerbread is cut out, Lomas recommends putting it into the fridge for at least 30 minutes and up to three days. Chilling the dough before it goes into a hot oven gives the butter a chance to firm up and reduces how much it spreads when baking.

Should gingerbread be soft or crunchy? ›

Gingerbread cookies should be soft. They should be supple. They should bend to your teeth before the cookie skin breaks and the crumbs fall all over you. They should retain a bit of elasticity, and maybe you can even leave your fingerprints on the cookie if you hold them too hard because you're just that excited.

What are the three types of gingerbread? ›

The three distinct types of gingerbread are brown gingerbread, wafer-based gingerbread and honey gingerbread.
  • BROWN GINGERBREAD.
  • WAFER GINGERBREAD.
  • HONEY GINGERBREAD.

What is the secret to soft cookies? ›

Cornstarch helps product soft and thick cookies. Using more brown sugar than white sugar results in a moister, softer cookie. An extra egg yolk increases chewiness. Rolling the cookie dough balls to be tall and lumpy instead of wide and smooth gives the cookies a bakery-style textured thickness.

How do you make cookies soft and not hard? ›

Baking at 375 degrees F as opposed to a lower temperature will help cookies stay soft: they'll bake faster which means they aren't in the hot, drying air of the oven too long. Pull the cookie sheet out of the oven when the cookies are just set: underbaking is better than overbaking.

What is the secret to keeping cookies soft? ›

“To keep cookies soft, store them in an airtight container and not in a cookie jar,” Amanda recommends. “While cookie jars are cute, they usually don't have airtight lids.

What makes gingerbread cookies hard? ›

Keep in mind that the longer the cookies bake, the harder and crunchier they'll be. For soft gingerbread cookies, follow my suggested bake times. Allow cookies to cool for 5 minutes on the cookie sheet.

Why refrigerate gingerbread cookie dough? ›

Chilling it for at least two hours or overnight gives the ingredients a chance to absorb one another, making it a whole lot easier to roll out the dough without it cracking. Follow this tip: Let the dough chill in the refrigerator, well-wrapped, for at least two hours or overnight before rolling it out.

What happens if you add too much butter to gingerbread cookies? ›

it's going to beat too much air into the butter. and it will cause the cookies to spread way too much.

Why molasses in gingerbread? ›

The deep, caramel-like sweetness of molasses pairs perfectly with the warm spices of ginger, cinnamon, and cloves, creating the iconic flavor profile of these classic treats. The choice of molasses over other sweeteners adds a depth and complexity that elevates gingerbread to a cherished holiday tradition.

How long should you chill gingerbread dough? ›

Divide the dough into two thick disks and wrap each disk in plastic wrap. Refrigerate until chilled, about 3 hours. (The dough can be prepared up to 2 days ahead.) To roll out the cookies, work with one disk at a time, keeping the other disk refrigerated.

How do you soften homemade biscuits? ›

The best way to reheat biscuits is in the oven. Yes, it takes a bit more time but only a few minutes.

How do you fix hard gingerbread? ›

Wrap it/cover it/enclose it somehow with a slice or two of fresh white bread overnight or a couple of hours. Should help!

Does gingerbread soften? ›

Allow icing to set completely before storing biscuits in an airtight container. The gingerbread will soften over time.

How do you firm up gingerbread dough? ›

Chill in the refrigerator for at least two hours to allow the dough to firm up, and up to three days ahead.

Why is my gingerbread dense? ›

Under-baking can cause a sunken cake and over-baking can cause a dry one, so making sure your gingerbread is properly baked is critical! Gingerbread is inherently slightly dense and heavy in texture, but each bite is perfectly flavored and moist and just melts in your mouth.
